Bacon isn't supposed to be sour. If anything, it's closer to salty than sour.
But it's actually savory. It's scientifically proven that your tongue has flavor receptors for L-glutamate, which foods such as meat, tomatoes, etc. are rich in, which is the source of the savory flavor.
